Mermaid Dora Cake

My niece is turning 4 years old, so of course, I wanted to make a cake for the pool party my sister-in-law was throwing. To go along with the big bouncy house for the kids and a Dora pinata filled candy, here’s the Dora Saves the Mermaids cake I came up with.

I covered the two separate tiers with blue fondant and then stacked them. I cut out a few stars and small flowers, added little eyes and even rolled out a little crab guy (he’s my favorite). I piped on the green coral using royal icing, and added the ‘pearl’ borders with italian buttercream. To finish it off, I poured brown sugar & graham cracker ‘sand’ along the bottom to complete the look.

I am pretty happy with how it turned out, and everyone really seemed to like it….especially the birthday girl who ended up eating Dora’s head! 🙂

On the menu for this Sugar Shindig: a 2-tiered Vanilla Cake with Raspberry compote filling, covered Vanilla Italian Buttercream and Marshmallow fondant.
